Pre-heat oven to 250 degrees

Line a baking sheet with parchment paper

Slice tomatoes in half lengthwise and place sliced half facing upwards on parchment paper

Sprinkle salt evenly over tomatoes to preference

Bake for ~2 hours and 45 minutes (until moisture removed, time may depend on your specific oven)

Add dehydrated tomatoes to a mason jar or airtight container

Add fresh herbs, additional salt (pinch) and olive oil
-
Mix well and allow time for tomatoes/herbs to come together in olive oil (ideally 12-24 hours in refrigerator until tomatoes soften, if oil solidifies set out at room temperature prior to serving)
