Place whole red bell peppers on grill and continue to roast each side until charred black (peppers will be very soft when ready)

Remove charred peppers from grill and allow a few minutes to cool

Fill a bowl with ice water and dip fingers prior to handling/peeling pepper skin
-
Carefully peel charred skin off each bell pepper (they will still be hot!) and remove stem/seeds
-
Slice peppers length wise into bite-sized pieces and add to a bowl
-
Add drizzle of olive oil, roasted garlic, basil and salt and mix well
