Ingredients:

  • English Muffin

  • Egg, over-easy

  • Creamy Pesto

  • Cheese of choice

  • Bacon

  • Tomato

  • Red onion

  • Arugula

*Ingredient amounts to preference

 

Creamy Pesto:

  • 2 cups fresh basil

  • 1/3 cup pine nuts

  • 1 clove garlic

  • 2 tbsp fresh lemon juice

  • 1/4 cup olive oil

  • 5 oz coconut yogurt

  • 1/3 cup fresh dill

  • 1 tsp fresh mint

  • 1/4 tsp salt

-Gluten & Grain Free English Muffins (Mikey's)
-Organic Pasture-Raised Eggs (Handsome Brook Farms)
-Colby Cheese (Organic Valley)
-Uncured Canadian Bacon (Niman Ranch)

DirectionS:

  1. Place basil, dill, mint, pine nuts, garlic, lemon juice, and salt in a food processor and pulse while slowly adding olive oil

  2. Once smooth, add coconut yogurt and continue to pulse until creamy

  3. Prepare breakfast sandwich to your preference

  4. ENJOY!
