Hot Honey cornflake chicken tenders

Ingredients:

1 lb chicken tenders

2 cups corn flakes, crushed

½ cup pecans, finely chopped

2 whole eggs, scrambled

Flour, amount to cover chicken (we used GF)

¼ tsp salt
-
¼ tsp pepper
-
¼ tsp garlic powder
-
Avocado oil spray
-
Garnish: chives, diced
Hot Honey Ingredients: -
½ cup honey
-
½ tsp your favorite hot sauce

Preheat oven to 375 degrees

Add eggs, salt, pepper and garlic powder to a bowl and whisk

Mix cornflakes and pecan and place on plate
-
Place flour onto a separate plate
-
Coat chicken by placing in flour, followed by egg, then cornflake/pecan mixture
-
Place chicken on wired rack baking sheet
-
Spray generously with avocado oil
-
Place in oven until chicken is crispy and thoroughly cooked (~30-40 min)

Prepare hot honey by mixing together honey and your favorite hot sauce

Drizzle hot honey generously on chicken

Garnish with chives
