Homemade Sweet Potato Sauce Recipe

Serving size: 6 cups

Ingredients:

  • 3 medium sweet potatoes, skin removed (600g) 

  • 2 cups honey crisp apple, chopped (275g)

  • 3 cups sweet onion, chopped (350g)

  • 3 celery stalks, chopped (120g)

  • 1 packed tsp fresh thyme

  • 4 cloves garlic (2 tbsp)

  • 3 tbsp unsalted butter

  • 3 tbsp honey 

  • 1 cup bone broth (add more to preference for thinner sauce)

  • Salt and pepper (to preference)

  • Garnish pasta with sliced almonds, fresh basil and fresh grated parmesan cheese (to preference)

DirectionS:

  1. Place sweet potatoes in boiling water until soft and then set aside

  2. Add butter to skillet over medium high heat 

  3. Add apple, onion, celery, and fresh thyme and sauté until brown

  4. Reduce heat to medium, add garlic and continue to sauté until garlic is browned 

  5. Add cooked sweet potato, sautéed apple/onion/celery/thyme/garlic, honey, and bone broth to high speed blender 

  6. Blend until smooth consistency 

  7. Add to your favorite pasta 

  8. Garnish pasta dish with sliced almonds, fresh basil, fresh grated parmesan cheese, and salt and pepper
