Preheat oven to 400 degrees

Mix ground beef, egg, sweet onion, parmesan cheese, Italian pork rind crumbs, grape jelly, fresh parsley, fresh basil, salt and pepper in a large bowl and combine well

Form each meatball (~1/2 cup size) and evenly space each one on an oven safe pan or skillet

Add additional grape jelly (to preference) over top each meatball

Bake at 400 degrees for 20 minutes then switch to high broil for 5-7 minutes (this will brown meat)

Remove from oven
