Ingredients:

TUNA TOWER:

​

  • Sushi Rice (cooked and cooled, measured 1 cup uncooked)

  • Spinach, amount to preference

  • 1 medium sweet potato, cooked with skin removed (½ sweet potato per tower) 

  • Tuna Salad, to preference

  • Creamy Apple Maple Sauce, to preference

  • Chives (garnish) 

TUNA SALAD:

  • 1 can Safe Catch Wild Ahi Yellowfin Tuna

  • 1 medium-sized green apple, chopped

  • 1/4 cup dried cranberries

  • 1/4 cup pecans, chopped 

  • 2 tbsp canned pumpkin

  • 2 tbsp mayonnaise 

  • 2 tsp maple syrup 

  • 1/4 tsp cinnamon

 

CREAMY APPLE MAPLE SAUCe:

  • 4 oz low fat yogurt 

  • 2 tbsp apple juice 

  • 1 tbsp olive oil

  • 1 tbsp maple syrup 

  • 1 tsp apple cider vinegar 

  • 1/8 tsp cinnamon

DirectionS:

  1. To prepare tuna salad, add Safe Catch Ahi Yellowfin Tuna (do not drain!) to a small bowl and mix well with green apple, dried cranberries, pecans, canned pumpkin, mayonnaise, maple syrup and cinnamon 

  2. To prepare Creamy Apple Maple Sauce, add low-fat yogurt, apple juice, olive oil, maple syrup, apple cider vinegar and cinnamon to a small bowl and whisk 

  3. Build tower using sushi tower kit (starting on the bottom) in this order: sushi rice, spinach, sweet potato and tuna salad pressing down each level/ingredient as tower builds

  4. Gently remove sushi kit cylinder

  5. Drizzle Creamy Apple Maple Sauce over tower

  6. Repeat steps 3-5 for a 2nd tuna tower

  7. ENJOY!
