Ingredients:

  • Spring mix

  • ​Arugula

  • Sweet potato, cooked/cooled/chopped

  • Chicken thighs, cooked and seasoned with fresh thyme/salt/pepper

  • Red onion, sliced 

  • Green apple, sliced

  • Honey crisp apple, sliced 

  • Avocado

  • Pecans

  • Pumpkin seeds 

  • Feta cheese 

  • Dried cranberries 

  • Cinnamon

  • Apple Maple Vinaigrette

*Ingredients to preference​

Apple Maple Vinaigrette Dressing Ingredients:

  • ¼ cup olive oil 

  • 3 tbsp apple juice 

  • 2 tbsp maple syrup 

  • 2 tsp apple cider vinegar 

  • Salt and pepper, to taste

  • baby spring mix and baby arugula (organicgirl)

  • Sprouted Organic Pumpkin Seeds (Go Raw)

  • Organic Raw-Unfiltered Apple Cider Vinegar (Bragg)

DirectionS:

  1. Prepare the apple maple vinaigrette by placing olive oil, apple juice, maple syrup, apple cider vinegar, salt and pepper in a small container with lid and shake to combine ingredients

  2. Build salad with ingredient amounts to preference 

  3. Pour apple maple vinaigrette over salad and top with cinnamon to preference

  4. ENJOY!
