Carrot Cake Overnight Oats Recipe

Ingredients:

  • 1/2 cup rolled oats

  • 1/2 cup carrot, shredded

  • 1/4 cup unsweetened coconut flakes

  • 1 tsp cinnamon

  • 2 tbsp walnuts, chopped

  • 1 tbsp chia seeds

  • Pinch of salt

  • 1 1/2 cups milk

  • 2-3 tbsp maple syrup (to preference)

  • 1/2 tsp vanilla extract

Food Sources:

  • Sprouted Rolled Oats (One Degree Organics)

  • Unsweetened Coconut Flakes (Field Day)

  • Almond/Coconut Milk Blend (Califia Farms)

  • Salt (Celtic Sea Salt)

DirectionS:

  1. Combine oats, carrot, coconut, walnuts, chia seeds, salt and cinnamon and mix prior to adding milk

  2. Add milk, maple syrup, and vanilla extract

  3. Shake or stir well and place in fridge overnight

  4. Top with additional walnuts, maple syrup and coconut shreds 

  5. ENJOY!
