Add 1 and a half bananas, heavy cream, vanilla extract and date syrup into a bowl and mix until pudding-like consistency

Cut remaining half of banana into thin, equal pieces and place flat on top of banana mixture

Heat coconut oil in microwave to melt (~30 seconds), remove from microwave and add date sugar mixing well

Spread coconut oil/date sugar mixture evenly over bananas

Use culinary torch to heat until sugar hardens and color caramelizes (continuously moving torch around to prevent burning)
