Bagels of choice (we used two)

Eggs (1 egg per bagel half)

Potatoes, cooked

Pepper jack cheese, freshly grated

Red bell pepper, sliced

Green onion, chopped
-
Salt
-
Pepper
-
Sriracha
*Amount to preference unless specified
*We used a 10-inch skillet for this recipe with medium-sized bagels

Preheat oven to 400 degrees

Slice bagel in half lengthwise and lightly toast
-
Spray skillet with oil spray of choice
-
Add freshly grated pepper jack cheese to evenly cover bottom of skillet

Place lightly toasted bagels on top of cheese with outsides of bagels facing up
-
Gently crack egg for yolk to sit in the hole of each bagel half
-
Placed cooked potatoes around bagels on top of cheese
-
Add sliced red bell pepper to preference
-
Add additional freshly-grated pepper jack cheese
-
Bake in oven on middle rack for 10 minutes, then switch to low broil for ~3 minutes (this will gently brown potatoes and melt cheese while keeping yolk runny!)

Remove from oven and add green onion, sriracha, salt and pepper to preference

*Cooking times may vary depending on oven. Closely watch eggs while cooking in oven to keep yolks runny!
