Bagel Breakfast Skillet Recipe

Ingredients:

  • Bagels of choice (we used two)

  • Eggs (1 egg per bagel half)

  • Potatoes, cooked

  • Pepper jack cheese, freshly grated 

  • Red bell pepper, sliced 

  • Green onion, chopped

  • Salt

  • Pepper 

  • Sriracha 

 

*Amount to preference unless specified

*We used a 10-inch skillet for this recipe with medium-sized bagels

DirectionS:

  1. Preheat oven to 400 degrees

  2. Slice bagel in half lengthwise and lightly toast

  3. Spray skillet with oil spray of choice

  4. Add freshly grated pepper jack cheese to evenly cover bottom of skillet

  5. Place lightly toasted bagels on top of cheese with outsides of bagels facing up

  6. Gently crack egg for yolk to sit in the hole of each bagel half

  7. Placed cooked potatoes around bagels on top of cheese 

  8. Add sliced red bell pepper to preference

  9. Add additional freshly-grated pepper jack cheese

  10. Bake in oven on middle rack for 10 minutes, then switch to low broil for ~3 minutes (this will gently brown potatoes and melt cheese while keeping yolk runny!)

  11. Remove from oven and add green onion, sriracha, salt and pepper to preference

  12. ENJOY!

 

*Cooking times may vary depending on oven. Closely watch eggs while cooking in oven to keep yolks runny!
